Summer Pasta - in 5 minutes

Want something really quick, light..yet so yummy? Please try my favorite summer pasta.


You will love it.


Ingredients:


Fresh Pasta or a good quality dry Angel Hair - enough for two people

Zest - one large lemon

Juice of the same large lemon - prepared ahead with no seeds

1-2 handfuls of baby spinach, arugula or mixed herbs

1/2 heaping cup of creme fraiche (the best choice for this recipe)

1-2 TBL grated or shredded Parmesan

fresh cracked black pepper

Sea salt

Olive oil


Directions:


Cook your pasta in salted boiling water for 2-3 minutes.


While the pasta is cooking zest your lemon into a bowl. Add the creme fraiche and the salt and pepper. Stir until creamy. Add the lemon juice and a little Parmesan then mix.


When the pasta is ready using tongs add hot pasta directly into the unheated creme mixture, then your chosen greens. Gently stir. If desired add a little olive oil into the pasta.


This is not a hot pasta dish but you can place in the microwave for 45 seconds if desired.


Finish each plate with a little more Parmesan and fresh cracked black pepper.


Serve immediately.
