A wonderful dish I threw together with left over grilled chicken.
Adjust the spices below as you wish.
Ingredients:
left over chicken - any amount
1/2 lb. thin spaghetti
1 TBL butter
1 tsp paprika
1/2 tsp red pepper (cayenne)
6 oz of red pepper pesto or sun dried tomatoes in oil - chopped
pinch or two - red pepper flakes
1 garlic clove mashed
pinch salt and black pepper
1 small onion - sliced 3 TBL tomato paste
1/4 cup dry white wine
1/3 cup low sodium chicken broth
2/3 cup heavy cream
handful of grated Parmesan
chopped parsley
Directions:
Cook your pasta according to directions.
In a large skillet melt the butter on medium heat. Add the onions and the left over chicken pieces. Cook for 5 minutes then add the garlic.
After 2 minutes add all your spices, pesto or sun-dried tomatoes and allow everything to sauté.
Add next the tomato paste and cook, stirring well, for another 2 minutes.
Add next the white wine and allow it to reduce by half. Add in the chicken stock.
Quick Tip - The pasta should almost be done at this point.
Add next the heavy cream into the sauce and simmer for 2 full minutes. Add salt and pepper - then the pasta (using long tongs right into the sauce).
Stir well.
Finish with the Parmesan and parsley.
ENJOY!
