Lemon Veggie Pasta

I wanted to do a light lemon pasta tonight that was quick and simple using one zucchini and summer squash I had in the fridge.
So simple. Dish takes 10 minutes.
Begin by heating water for your pasta. I used angel hair tonight.
Slice your summer squash and zucchini into matchstick like slices.
In a large skillet heat 1-2 TBL olive oil and when hot add in the sliced veggies. Salt and pepper the veggies and if you like add a pinch of paprika.
stir the veggies and then drop your angel hair into the water.
Boil for 3 minutes.
Add the zest of one lemon into the veggies about 2 minutes into sauté - then add in the juice of the same lemon.
When the pasta is ready use tongs and drop into the skillet with a good 1/2 ladle of pasta water.
Cook for 1minute tossing the pasta into the veggies.
Add 1/2 cup fresh grated Parmesan cheese and stir.
Finish with fresh cracked black pepper.
