Midnight Pasta

This is a very simple delicious pasta that I first began making late at night after Tom and I returned from a trip. Usually, we get home around 11:00 pm and we are both starving. Tom cannot sleep very well if he is hungry, so one night while he was unwinding from our drive home, I stood in front of my fridge and just stared. What in the world can I make (again) this late at night?
A few times I did scrambled eggs but Tom was usually still hungry. That is when I got an idea to do a quick angel hair pasta in olive oil and Parmesan cheese. One night as I was heating the olive oil I wanted to add something - so I grabbed a shallot and sauteed it. I left the stove for a few minutes to unpack. When I got back to drain the pasta - I saw that the shallots got a bit too dark. They had a slight char. I was not going to redo this part this late at night so I added the angel hair directly from the pot, using tongs, making sure I had some of the pasta water, and I quickly added a good handful of Parmesan cheese, salt and black pepper and hoped for the best. My goodness was it fantastic! The shallots were crunchy and added just enough flavor that Tom and I ate the whole batch. We slept like babies.
This dish is wonderful anytime you want a great pasta in under 8 minutes. The hardest part is waiting for the water to boil.
This time - there is no set recipe. Just throw this dish together as I did - no need to measure and trust me - you will love it!
Quick Tip: Be sure you start with a nice amount of olive oil. If making for more than 2 people use 2-3 shallots.
