Bacon Onion Pasta

Sensational pasta that can be ready in less than 10 minutes.
I love this recipe especially during the winter and will alternate between pancetta or bacon. Traditional Italian dishes similar to this will use pancetta. I will use whatever pancetta is available at the store (sometimes there is a premium pancetta available) or I will use a pepper bacon.
Delicious and super easy to make.
Here is how to do it:
1/2 box Angel Hair, Thin Spaghetti or Fettuccine (love Barilla)
handful of chopped pancetta or bacon - diced
1 small onion - rough chop
handful of fresh basil - chopped
splash of dry white wine
Olive Oil
Fresh Cracked Black Pepper
Optional - handful of small baby tomatoes - sliced into quarters
Optional - pinch of red pepper flakes
Optional - grated Romano or Parmesan to finish
Directions:
Prepare your selected pasta in slightly salted water.
In a non stick skillet, splash a little olive oil and add the pancetta or bacon. Begin to render on medium high heat. After 2 minutes add the onions and a touch of black pepper.
As the bacon begins to color and the onions become soft, add if using the tomatoes. Allow everything to cook, stirring occasionally for 2-3 minutes.
Add next a nice splash of white wine (about 1 oz.) Simmer everything for 1-2 minutes then add the chopped basil or parsley if you prefer.
If the pan begins to get dry add some of the pasta water - a little at a time.
Taste your sauce and add maybe a bit more black pepper.
Using long tongs add the pasta into the skillet and stir well until everything is incorporated.
I like to allow the pasta to sit in this particular sauce for 1-2 sometimes 3 minutes depending on if I am using Angel Hair or a Fettuccini. Be sure to stir or toss occasionally.
Right before serving I like to add a little olive oil into the pasta and give it a good stir.
When ready plate, top your pasta with your selected cheese.
Quick Tip - is using red pepper flakes you can add it at any time while the sauce is cooking or use a pinch with the cheese.
