Grilled Cheese Sandwich

I love a great grilled Cheese Sandwich, especially with a cup of tomato soup. We were all raised were we not on this classic combination. I have made a lot of grilled cheese sandwiches over the years, many different ways, and they were all great.
Here is my version of a scrumptious Grilled Cheese Sandwich - that is good enough to have with a glass of white wine or ice cold Champagne.
Ingredients:
2 slices of thick sourdough bread or split a ciabatta in half.
2 Tbsp soft butter (salted or unsalted is fine)
1 heaping Tbsp sharp cheddar- shredded
1 heaping Tbsp Gruyere cheese - shredded
1 heaping Tbsp Parmesan Cheese - shredded or Mozzarella or BOTH
1/2 teaspoon of Dijon mustard
*Have all of your cheeses ready before you begin.
Heat on medium low heat a non stick sauce pan large enough to hold your sandwich.
*Do not raise heat while cooking your sandwich.
Butter one side of your selected bread and lay it down on the pan. Spread your Dijon mustard on the bread side which is up. Next - top the mustard side with your 3 cheeses being careful to keep the cheeses on the bread.
Place the next bread slice on top of the cheeses and using either a (clean sauce pan) or a kitchen press - gently press down on your sandwich - allowing the sandwich to cook on medium low heat for approx 2-3 minutes.
When the sandwich is ready to turn, butter the top side and then flip the sandwich over. Using the same "press" - continue to cook your sandwich for another 2-3 minutes or until the cheese starts to ooze out.
Quick Tip #1 - Some cooks will use mayonnaise instead of butter on their grilled cheese sandwiches. I have tried this method and it is actually quite good.
Just be sure not to soak your bread with the mayo. Just lightly coat or your sandwich could be soggy.
Quick Tip #2 - if you like sliced apples inside your grilled cheese add them onto of the Dijon Mustard before your cheeses. Or you can use a slice of thick ham.
Use thick bread to accommodate all of your ingredients.
