Grilled Vegetables w/yogurt dressing

One of the joys of summer is the variety and freshness of garden vegetables. I love to roast vegetables but in the summer grilling is sometimes a better option.


The easiest way to grill is to buy a grill basket, use aluminum foil or lay large slices straight on the grates. You can season with just salt, black pepper and a little garlic salt or do a Grill Mix spice blend, a light balsamic dressing marinade, etc.


When grilling keep an eye on the veggies to be sure you pull them when you are happy with the level of char. My favorite grilled veggie combination is red onion wedges, red and yellow peppers, summer squash, zucchini slices and corn on the cob


Here is a great yogurt dressing to make to serve along side your grilled veggies.


1-2 cups of full fat Greek Yogurt - plain or lemon

1 teaspoon honey

zest one lemon

juice of one lemon

salt & black pepper

pinch of garlic powder

pinch of Emeril’s

1 teaspoon white champagne vinegar or white balsamic vinegar

Handful of chopped herbs as you like - parsley, basil, dill, chives or cilantro


Mix well then taste. Adjust seasoning as you wish. Serve cold.
