Delicious Eggs Anytime

I am often asked in blog emails to post the easiest dinner to do when cooking is the last thing I want to do and going out to eat is not an option.


This is a recipe I rely on morning, noon and night when I want to eat healthy but not fuss.


Once you try this basic recipe formula you can substitute small cherry tomatoes with beautiful grapes, blueberries, strawberries or raspberries, slices of baby yellow, red or orange peppers.


The goal is a complete meal in under 8 minutes.


Here is how I do it.


Ingredients:

2 extra large eggs - cage free

handful of baby spinach

1 shallot - chopped

Olive Oil or Butter

Salt & Black Pepper

on the side - baby cherry tomatoes, sliced fruit or raw baby peppers


Directions:


In a small skillet on medium heat 1 TBL of Olive Oil or 1/2 TBL butter. When hot add the chopped shallot.


Sauté for 2 minutes then add the baby spinach. Add a pinch of salt and black pepper.

Stir for one minute. Gently push the spinach as it is wilting to the side of the pan. I try not to over cook the spinach. Just a slight wilt is great.


Reduce your heat to medium low and add the 2 eggs.


Turn the eggs when cooked to your liking. Add a pinch of salt as you wish along with a touch more black pepper.


When ready to serve - plate the spinach and shallots first with the eggs along side or on top.


Add your selected fresh tomatoes, peppers and/or fruit along side.


*I find this dish to be addicting because it is super nutritious, so easy to do and perfect for any time of day.
