Cucumber Salad

For many people eating cucumbers is often just plain boring.
In follow up to my prior post on Sugar Snap Peas as a snack; here is a surprisingly great way to enjoy cucumbers, any time of day, as a snack, or as a salad to go along with a steak, grilled BBQ chicken or even kielbasa.
Once you try cucumbers as a snack or salad this way - you will pick up a cucumber every time you shop.
Cucumbers as a snack:
Slice cucumbers into thin or thick pieces. Add 1-2 TBL Apple Cider Vinegar. (Believe me Apple Cider Vinegar) is refreshing and so good with cucumbers. Add a pinch of sea salt and if you like a touch of black pepper. No need to add any olive oil.
Cucumber Salad:
Slice a large amount of cucumbers (enough for 4 people) and them lay flat onto a platter or inside a serving bowl. Add very thin red onion slices if you wish. Add any fresh herb that you like such as mint, dill, basil or fresh parley.
Add a touch of your favorite vinegar (red wine, white balsamic or sherry vinegar) and a drizzle of olive oil. Finish with coarse sea salt.
Quick Tip - adding along side or on top of the cucumbers small amounts of fresh feta or goat cheese is wonderful.
