Butternut Squash Noodles

Commonly referred to as zoodles; I have fallen in love with both butternut squash and zucchini noodles. The versatility of either variety is as it is with any pasta. Simply substitute your angel hair or spaghetti with zoodles and you will go a long way towards reducing gluten in your diet.
Freshly prepared zoodles can be found in most grocery stores today. For me personally, I have found that zoodles are far more delicious than I had ever thought possible. I am beginning to find every week more and more creative ways to include zoodles into my recipes.
Quick Tip - butternut squash noodles are dense and can handle longer saute times than zucchini noodles. If you decide to substitute zucchini noodles for this recipe you must reduce the cooking time by half. Zucchini noodles disintegrate and soften much faster due to their water content. I cook zucchini noodles no longer than 2-3 minutes in any recipe.
Here is my favorite way to enjoy zoodles that is quick and delicious.
Zoodles with Parmesan, Garlic & Walnuts
In a large skillet heat 3 Tbsp. Olive Oil until hot. Add chopped or mashed garlic in any amount you wish. After 1 minute add one package of butternut squash noodles, sprinkle with a generous pinch of salt and black pepper.
Saute the noodles as you would angel hair pasta. Using tongs turn and incorporate the noodles with the garlic and oil. Once the noodles are coated add into the skillet a handful of chopped walnuts or if you prefer pecans. Allow the nuts to heat with the noodles for 4 minutes. If the zoodles begin to dry - add a splash of water, white wine or chicken stock.
For more even cooking cover your skillet or pan while cooking.
After 4 minutes taste for desired texture. You may want to cook the zoodles for 1 minute longer.
Turn off the heat and finish by adding grated Parmesan cheese, (mozzarella if desired), fresh chopped basil or parsley.
This dish makes a wonderful lunch or as a great side to serve along side a grilled steak or pork.
I would recommend using zucchini noodles in this exact recipe if you are serving salmon or any fish.
