A Simple Summer Salad

Refreshing, easy to make and simply delicious.
Ingredients:
1-2 cups of watercress, baby spinach or arugula
1 cup cherry tomatoes - yellow, orange, red and purple mix is great - sliced in half
A small amount of red onion - sliced very thin
4 TBL fresh Greek Feta or goat cheese
1 TBL chopped basil
Optional - sliced cucumber
Optional - sliced olives
Directions:
Mix all the salad ingredients in a bowl. Prepare a quick homemade salad dressing.
This salad dressing ratio works no matter what vinegar you use or if you decide to use fresh lemon juice.
Take 1/2 teaspoon Dijon mustard and add 1/4 cup sherry, red wine or white balsamic vinegar (or fresh lemon juice). Add a pinch of salt, garlic powder and fresh cracked black pepper then stir using a fork or small whisk. Add in 1/2 cup good quality extra virgin olive oil.
When ready to serve - add as little or as much dressing to your salad as you like then serve.
