Traditional Maine Lobster Stew

There are several versions on how to make a lobster stew or lobster bisque. In Maine, traditional lobster stew is deliciously simple whereby large chunks of fresh lobster meat, cream, and butter are combined to make a rich delicious stew.
In my version I like to add a touch of cream sherry. I think it makes an amazing difference.
Ingredients:
1 lb. fresh cooked lobster meat - be sure the lobster meat is shucked same day as making this stew. Cut into large edible chunks.
1 cup butter
2 qts. half and half
1 Tbsp. cream sherry
Salt & black pepper
Optional - 1 teaspoon of lobster base.
Directions:
In a large saucepan heat all the butter.
Add the lobster meat and saute for 5-7 minutes. The butter may turn a little pink.
Add the sherry and cook for 1-2 minutes.
Add the half and half.
Bring the stew up to a simmer and hold it there without boiling.
Taste the stew and if needed add a pinch of salt and black pepper.
Quick Tip - if using lobster base add the teaspoon into the melted butter and allow to fully dissolve before sauteing the lobster. Lobster base is very salty so taste the stew before adding more salt.
