Kitchen Sink Soup

Every couple of weeks I make a soup from leftovers in the fridge. This weekend I had an unusual amount of unused bagged veggies - so I came up with a new version of a fast soup from ingredients I do not typically use in a homemade soup.
The result was something really great.
Here is what I made.
Soup Ingredients:
2 cleaned heads of romaine - sliced thin (replaced celery which I did not have)
2 leaks - cleaned and sliced thin
1 yellow onion - sliced
1 large shallot - sliced
1 bag of shredded coleslaw mix
1 bag of shredded carrots
2 diced carrots
1 summer squash - sliced
2 cups chicken bone broth
2 cups water
2 TBL Balsamic Vinegar
Herbs de Provence, garlic powder, salt and lots of black pepper
Ground chicken in tomato sauce - leftover from a pasta dinner
Directions:
I added a little olive oil into my soup pot. When hot I sautéed the onions and shallots for 5 minutes then tossed all of the above vegetables, the spices, salt, pepper, garlic powder and got everything stirred and mixed together.
After 4-5 minutes I added the 2 cups of bone broth and water, the balsamic and brought everything to a light boil for 25 minutes.
As an after thought - I added the rest of my ground chicken in tomato sauce. Boy, did that make a huge difference.
Heated the soup for another 15 minutes.
Fabulous. I have an amazing soup for the week.
