Sunday Morning - Orange Banana Pancakes

On a Sunday morning there is nothing like a stack of fantastic pancakes. I am a huge fan of blueberry lemon pancakes but this morning I decided to make banana pancakes as my husband loves them so much.
Quick Tip - I have come to rely on Stonewall Kitchens Pancake mix as it is so easy and very reliable.
Ingredients:
4-5 large spoonfuls of Stonewall Kitchen Pancake mix
1 large egg
4 Tbsp. melted butter
1 whole banana - sliced
1 handful pecans or walnuts - chopped
1 large orange - zest and juice
1/3+ cup whole milk, coconut and/or almond milk - use as much or as little as you like
Maple Syrup - warmed
Directions:
In a large skillet on medium heat melt 4 tablespoons of butter. While the butter is melting combine the pancake mix, milk, egg, orange zest and all of the squeezed juice.
Stir until fully incorporated. Add next 2 tablespoons of the melted butter - leaving 2 tablespoons in the skillet for the pancakes. Add more butter into the skillet if desired.
Add next into the pancake mix the sliced banana & pecans.
Stir well then ladle the mix into the hot skillet as you desire.
Cook the pancakes on medium heat 4 minutes on the first side then 2-3 minutes on the other side.
Finish by adding warmed maple syrup over each serving.
