Succulent Steak w/Caper & Peppercorn Sauce

During the summer Tom's favorite thing to grill is steak. It is a staple in our home at least once a week.
Last week, I told Tom I wanted to do a marinade for our steak that night. He looked at me as if I was about to commit a sacrilegious act. Tom shouted "what is wrong with salt and pepper". I said "absolutely nothing, but I would like to give a marinade a try". With a defeated look of some distress Tom said "okay - go ahead". He said it n a tone of such disappointment - he looked as if he was about to be sent to the guillotine.
Here is what I did:
I began by seasoning two 8 oz sirloin steaks with sea salt and fresh cracked black pepper. I placed the steaks inside a large plastic bag. In a small bowl I added 2/3 cup olive oil,
2 Tablespoon balsamic vinegar, 2 teaspoon capers, 1 (very small) red chili pepper diced, the juice of one fresh lime, 1 Tablespoon Dijon, 2 garlic cloves mashed, a touch of low sodium Tamari along with a small handful of fresh chopped thyme and rosemary.
Stir the marinade until well mixed then pour into the plastic bag.
I recommend gently rubbing the marinade into the steak for about 1 minute. Seal the bag and allow it to rest in the refrigerator for approx 4 hours.
*Remove the steak from the refrigerator at least 30 minutes before grilling.
Once you remove the steak from the plastic bag - pour any residual marinate into a small sauce pan. If you need to you can scrap the top layer of marinade off the steak or simply keep it on the steak and skip the next step in making a sauce.
To make the sauce - after removing steak from the grill allow it to rest for a few minutes. Heat the sauce until bubbling. You may only be working with a small amount of marinade and that is okay. If you have beef broth on hand you might want to add a small amount.
Add next 2 Tablespoons of butter into the pan along with a teaspoon of capers.
Allow the butter to simmer. Before tuning off the heat add a small amount of fresh cracked peppercorns into the sauce then serve.
Pour the sauce over the steak while it is whole; or if you wish - slice the steak at an angle and spoon the sauce over each piece before serving.
Suffice to say Tom LOVED his steak!
