I am trying to eat more Salmon as it is a wonderful protein for CKD stage 4. Since my functioning dropped rather significantly in the last few months I am eating as many ”good for my kidney’s” foods that I can - and that includes now more salmon.
I went to the store today at noon an found two nice center cut filets.
Here is my favorite recipe for easy delicious salmon.
Ingredients:
2-4 center cuts of salmon - skin removed
1 lemon - juiced
2 TBL butter
4 oz dry white wine
1 large shallot - chopped thin
1 small bunch of fresh parsley - chopped
salt & fresh cracked pepper
Optional - 1/2 cup heavy cream
Directions:
In a large skillet heat the butter on medium high until melted.
Add salt & fresh cracked pepper to each side of the salmon and lay into the butter and sauté until a nice golden color begins to form on the bottom then turn the filet over and cook for another 3 minutes.
After 3 minutes add the white wine and reduce one minute. Then add the lemon juice and chopped shallots and allow it to cook for 2 minutes. If using heavy cream - add then reduce the sauce until you achieve the thickness you like. Quick Tip - if using heavy cream gently shake the pan a little which will help to thicken.
Quick Tip - you can decorate your salmon with slices of fresh lemon if serving for guests.
Finish with chopped parsley - then serve.
ENJOY!
