Sauté Cabbage w/bacon, onion, red peppers and more

Adding cabbage into my diet has always been challenging. I know that it is a very nutritious vegetable, but my experience with it, especially while growing up was limited to my Mom’s polish recipe of stuffed cabbage with ground meat and onion. Delicious, but I do not like to do rolled anything - so I have avoided making cabbage outside of corned beef for years.
Recently, I tried a sautéed cabbage and love it.
So I came up with this version of what a fabulous cabbage recipe will be in our house from now on.
**As with many vegetable recipes add or subtract whatever you like OR just do a sautéed cabbage in lots of butter, salt and pepper with a touch of lemon juice. It will come out great.
Ingredients:
1 small head of cabbage - sliced thin as if making Cole Slaw
2-3 strips of bacon - cut into small pieces
1 small onion - sliced
3-4 TBL butter
TBL - white champagne vinegar
1 shallot - sliced thin
1 red bell pepper - de seeded and sliced thin
1 bunch of scallions - sliced
salt & black pepper
chopped fresh parsley or basil
Optional - mushrooms - any kind you like
Optional - garlic powder
Optional - peas
Optional - sausage or any kind of ground meat
Optional - sriracha sauce
Directions:
In a large wok or skillet cook the bacon until fully rendered then remove. Add into the bacon fat your onions and any meat or sausage if using. When cooked remove and set aside.
Melt 3 TBL of butter. When melted add in the cabbage as well a large pinch of salt and pepper. After 5-7 minutes add all of the vegetables you have selected.
Next add the garlic powder and any vinegar you like and sauté. Taste the vegetables a few times as you go to see what else you might wish to add.
When the cabbage has reached the desired tenderness add 1 TBL of butter.
When the butter melts your dish is ready to serve.
Finish with fresh chopped parsley or basil - sriracha and/or fresh chopped scallions.
