Rib Eye Steak in Garlic Mushroom Sauce

A quick delicious and very easy steak recipe for nights when you want an elegant dinner that is super easy to prepare.


A winner!

Ingredients:

2 - 8 oz Rib Eye Steaks

1/3 cup low sodium beef stock

8 oz mushrooms - whatever kind you prefer - chopped

1 small red chili pepper - sliced and chopped with seeds removed

2 garlic cloves - sliced thin

2 shallots - sliced thin or chopped

1 TBL cognac

1 TBL Olive Oil

1/2 TBL Butter

Salt & fresh cracked Black Pepper

Optional - 1 teaspoon Veal Demi Glaze


Directions:

Allow the steaks to come to room temperature before cooking. Usually I rest my steaks on the counter for 30 minutes. I salt and pepper both sides 15 minutes before cooking.


Using a cast iron skillet or a large non stick - heat the olive oil on medium high heat until very hot.


Place the two steaks into the skillet being careful not to crowd.

Sear both side of the steaks for 2-3 minutes depending on thickness.

Remove the steaks and set aside.


Into the pan add your chopped shallots and mushrooms. Reduce the heat to medium and cook for 5 minutes without adding any salt and pepper. Once the mushrooms begin to color add in the chili and garlic. Stir and and allow to cook for 1-2 minutes.


Add next a pinch of salt and black pepper then stir.


Add next the cognac and allow it to cook down for one minute. Do not flame if you are not experienced.

Add next the beef stock, butter and veal Demi glaze if using. Allow everything to cook for 1-2 minutes while stirring.

Test your steaks by touch to see if they are medium rare to rare. Add the steaks back into the pan and using a spoon begin to baste the steaks with the sauce until they are at the right temperature.


Serve with your favorite steamed vegetable.
