Fettuccine Alfredo

Are you ready for the fastest comfort food for your stay-at-home confinement?


Look no further than this no fail Fettuccine Alfredo. There are many ways to do a luscious Alfredo but this recipe is absolutely perfect for when you need a quick warm hug of delicious pasta and cheese.


Ingredients:

1 box Fettuccine

2 cups heavy cream or half and half

4 TBL butter

1/2 cup grated Parmesan

salt & black pepper

Optional - pinch of red pepper flakes

Optional - one garlic clove mashed or garlic paste from a tube

Optional - fresh chopped parsley


Directions:


Cook your pasta in generously salted water. Drain 1 minute before box suggestions

Reserve one ladle of pasta water.


In a large sauce pot melt the butter on medium heat. If using garlic and red pepper flakes add when the butter begins to fully melt.


Add the cream next. Allow the cream to begin to simmer. When the cream begins to really simmer add the grated cheese...reserving a little for topping.


Mix well the sauce. Add a nice pinch of salt and fresh black pepper.


Add your pasta directly into the sauce using tongs - or reserve a little pasta water and drain the pasta adding immediately into the sauce.


Stir the pasta to incorporate and allow the pasta water to help you achieve a nice creamy sauce. **I prefer not too thick a sauce - but add or not add the pasta water as you wish.


Serve immediately on warmed plates and finish each serving with more Parmesan or chopped parsley.


Ahhh....there is nothing like this Alfredo, pjs and a long movie.
