Ravioli sautéed in Sage Butter

A perfect dinner for two when you want to eat in less than 15 minutes and enjoy a delicious elegant meal.


This recipe is simple and can be made with any refrigerated ravioli. My local store carries a family size that is very good.


I love many varieties of ravioli for this recipe. Three Cheese Ravioli or Butternut Squash Ravioli are great or my new favorite - Sausage & Cheese RaviolI is delicious.


*Quick Tip - prepare everything right before you are ready to eat.


Ingredients:

1 large bag of fresh Ravioli

2-4 TBL salted butter - depending on amount of ravioli

1 small bunch of fresh sage - chopped into small slices

1 shallot - chopped fine

2 oz of white wine or fresh lemon juice

black pepper

pinch of salt

1-2 Olive Oil

Optional - teaspoon of capers

Optional - freshly grated Parmesan


Directions:


In pot of salted boiling water cook you ravioli until just done. Please do not over cook.


While the ravioli is cooking heat the butter in a large skillet on medium - medium high heat.


When the butter melts add the shallots and after one minute add the chopped sage. Sauté until both are lightly brown. If need be reduce the heat so as to not burn.


*sage is fabulous when sautéed in butter.


Add next the white wine or lemon juice. If using add the capers.


Add next a good pinch of fresh cracked black pepper and salt.


Stir well then add in the oil oil.


When the sauce is hot use a slotted spoon to add the ravioli into the sauce. A little pasta water is fine.


Heat the ravioli in the sage butter for 1-2 minutes then serve.


Finish with freshly grated Parmesan if desired.
