One Bowl Moist Chocolate Cake

Tom loves chocolate and I try on occasion to make a box cake for him. The last box cake that I made a week ago was a Duncan Hines fudge cake mix and it was a huge disappointment. It was as dry as can be. Not sure if the box mix was really old but it was a real disappointment.
I looked around for an easy recipe I could do with a whisk and found a unique one bowl recipe that I tried out yesterday. It came out amazing. Moist, rich and absolutely perfect.
I couldn’t wait to share this new recipe today.
Ingredients:
1 cup flour
3/4 cup sugar
1/3 cup cocoa - I used a semisweet that I had on hand
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup oil - I used olive oil but you can use a vegetable oil
1 egg
1/2 cup milk
1/2 cup boiling water
1 teaspoon vanilla extract.
*Optional - I added the zest of half an orange not called for.
Directions:
Preheat oven to 325 degrees or 350 depending on whether you use a dark pan for baking.
Grease your pan as you wish. I used butter and a parchment bottom.
Into a large bowl sift all the dry ingredients to include the cocoa powder. Whisk after sifting until everything is incorporated.
Add next the egg, the milk, the oil, vanilla extract and whisk altogether.
Next - add in the boiling water and stir well. *I recommend boiling the water first before starting and allow the water to rest so that is really hot but not boiling when you add it in.
The cake mix will be thinner than normal and at first I was worried I did something wrong but the cake came out fantastic. Much better than I expected.
Place the pan into the oven and bake for 30 minutes. 30 minutes exact worked perfectly for me.
I allowed the cake to cool for 20 minutes then flipped it out of the pan and made a quick chocolate ganache.
Ganache: for this cake I added 1/2 cup of semisweet chocolate chips along with 1/2 cup heavy cream and microwaved it for 30 seconds and then stirred well. I needed 5 more seconds for it to be perfectly melted without burning. I added 1 TBL of cold coffee and mixed until smooth then cooled.
Decorate as you wish. *Next time I am going to double this recipe for a two layer cake.
