Jam Sauce Solution for Chicken, Pork & Vegetables

I received an email request last night from a Mom who is at a loss now for new ideas on how to feed her family in a creative flavorful way.
I realized a lot of people stuck at home right now are probably feeling this exact same way.
My number one easy enhancer for any kind of meat, fish or vegetable is to make a simple jam sauce combining any jar jam you have in the fridge along with butter.
My favorites are fig, orange marmalade and blueberry. Apricot works great as does blackberry and mixed fruit.
There are a couple of ways to do this sauce. Minutes before serving mix a heaping tablespoon or two of your selected jam with 1-2 TBL butter. Microwave together for approx 25-30 seconds. Stir to incorporate and pour the sauce over your chicken or your vegetables a few minutes before whatever your cooking is done.
Simply pour the sauce all over and place back into the oven for 2-3 minutes.
A jam sauce works best added when there are a couple minutes left on the timer.
Quick Tip - you can add earlier in the cook process however the sauce will be completely absorbed.
*You can further enhance any jam sauce with lemon zest, orange zest as well your favorite herbs.
Once you try this jam sauce and find out how transformative this enhancement can be you may want to get very creative.
