Jess, this is for you love.
Green Beans are so delicious. I love them roasted, steamed and sauteed, but I especially love them blistered. Blistering means simply that you scorch them for a few minutes under the broiler before serving. Add's incredible flavor.
Here is my version of Blistered Green Beans with garlic, finished under the broiler for that added touch of flavor.
Simple recipe.
1-2 bags of fresh cleaned green beans.
6-8 cloves of garlic - chopped medium thickness. Not too thin
1-2 TBL butter
1-2 TBL Olive Oil
coarse sea or kosher salt & black pepper
Optional - grated Parmesan before serving
In a large saute pan heat the butter and olive oil. When hot add your garlic and saute for 2-3 minutes without burning. Once the color begins - add all your green beans along with a good pinch of coarse salt & black pepper. Stir well until the green beans are nicely coated and beginning to become tender and dark green in color. You can cover them too in order to stream for a minute if you like. Stir often so that the garlic toasts nice and brown but does not burn.
Turn on your broiler to high.
Insert your pan under the broiler for2-3 minutes. Remove when you
you have achieved the perfect blistering. Not too dark, but nice and crispy. The first time keep an eye on the green beans so as to not burn.
Remove from the oven and immediately toss so the toasted garlic is all over the top of the beans. Add a pinch of coarse salt and if you wish a little grated Parmesan cheese.
Serve immediately.
Quick Tip - these beans are so good also for an early evening treat with crusty bread and cold white wine (for two). XOXO
ENJOY!
