Feta Cheese, Olive Oil & Herbs

One of my fondest memories of back-packing Greece, when I was 20 years old, was during an afternoon hike when my friends and I after walking along a dirt road on the island of Crete. We were called over to this older couples home, as they were preparing to sit down for an afternoon snack. What they served us was the most simple of foods, but the flavors were so delicious - I have recreated it for years every summer.


A large wooden platter sat on a small bistro table. There was an array of small plates with a decorative serving dish in the center of fresh feta cheese; the couple themselves had made. Over the top of the feta wedge dripping down the sides was a beautiful green color olive oil, sprinkled with fresh crushed herbs. A bowl of luscious olives were next to the cheese plate along with a warmed crusty flat bread.


It was unbelievably delicious.


I have never forgotten this afternoon and how amazing such a simple combination of fresh foods could be.


I encourage you to replicate this recipe when the sun is warm or after you have enjoyed a beautiful day at the beach or by a pool. Get a good Greek Feta from the store and drizzle over the top a nice flavorful olive oil and finish with cracked black pepper, fresh chopped oregano, thyme or even parsley.


Serve with a bowl of mixed olives if you wish, a warm bread stick and ice cold white wine


A true feast for the senses.
