Delicious Potato Salad

While summertime is a perfect time to make potato salad the fact is it is delicious anytime of the year. I do not use mayonnaise for this potato salad recipe. To add a bit of creaminess I use a Greek style yogurt. It adds a wonderful flavor.


Serve this potato salad along side a lamb roast, grilled steak or even a roast beef sandwich. It is very easy to make and takes no time at all.


Ingredients:

2.5 lbs. of small yellow potatoes.

3 strips of smoked bacon - chopped into very fine pieces

1 small handful of parsley, chives and and (mint) if desired - chop all of the herbs together

zest of one lemon

juice of one lemon

6 Tbsp. extra virgin olive oil

Salt & black pepper

3 Tbsp. Greek style plain yogurt

1 teaspoon yellow mustard

1 handful of plain panko breadcrumbs


Directions::

Cook the finely chopped bacon until very crispy. Drain. Add into the hot oil the panko breadcrumbs and toss around until they are nicely toasted. Remove and hold with the bacon.


For potato salad it is best to add the potatoes into the salted boiling water (whole) after the water has begun to boil. This method helps to bring out the potatoes natural flavor.


Once the potatoes are soft and break easily with a knife remove from heat and drain well.


Add the potatoes into a shallow style bowl and gently cut the potatoes in half or if they break easily that is perfect.


Immediately add into the hot potatoes all the olive oil, a good pinch of salt and black pepper. Zest the lemon into the potatoes then cut the lemon in half and squeeze the lemon right onto the potatoes - being careful to keep the little seeds out.


Give the potatoes a gentle toss.


Add into the potatoes next the chopped herbs, the yogurt and yellow mustard. (please note Dijon is too strong to use with the yogurt).


Gently toss the potato salad again and taste. Add a bit more salt and pepper if needed.


Finish by topping the potato salad with the bacon and the toasted panko crumbs.


Serve the potato salad at room temperature.


Quick Tip - do not reheat the potato salad.
