Crunchy Roasted Potatoes

This is my 100th post. It will be my last post for for 2019 and I feel it is a great one to round out my recent posts on the best side dish there is - Potatoes!
If you follow my recipe steps exactly you will have an amazing simple side dish for any dinner.
Quick Tip - leftovers work wonderfully in the morning with eggs.
I recommend using Yukon gold potatoes for this one recipe as the results are simply amazing. You can buy large Yukon gold potatoes or the small yellow potatoes sold in a mesh bag. They both work great.
Ingredients:
3-5 large Yukon Gold potatoes - unpeeled, cut into large chunks.
OR - 1 bag of small yellow potatoes. Do not cut or peel
4 TBL Olive Oil
kosher Salt and fresh cracked black pepper
garlic powder
herbs and seasoning
**You will need a half sheet pan to roast the potatoes.
Preheat Oven to 425 degrees
Directions:
Place your selected potatoes in generously salted cold water. Place on medium high heat and bring water to a boil. Boil for 8 minutes.
Drain and allow the potatoes to dry in the colander for 2-3 minutes before next step.
When ready spread all the potatoes onto the baking sheet.
Next, using a hand held potato masher, gently press the masher onto the potatoes - spliting and cracking them. DO NOT MASH. *The goal is to gently break open the potatoes and allow a few crumbles of potatoes to fall onto the sheet pan while keeping the potatoes whole. If a few break in half that is fine. **You will get the hang of it after the first time.
Pour a generous amount of olive oil all over the potatoes. Do not worry - you almost cannot use too much.
Season the potatoes with salt, black pepper, a touch of garlic powder, a pinch of dried herbs de Provence or even Emerils.
Toss to mix - place the sheet pan into the oven.
Set the timer for 15 minutes.
When the timer goes off use a spatula to toss the potatoes around then place back into the oven for 10-12 minutes more or until the potatoes are nice and browned with lots of crispy bits.
I love to serve these potatoes with sour cream on the side
Perfect with a steak or any chicken dish.
