Creamy Garlic Chicken Thighs w/mushrooms

Another awesome easy garlic based recipe. Garlic is one of best ways to build your immune system and aid in keeping colds at bay. Whether you roast garlic heads with olive oil, salt and pepper until creamy and delicous - spreading over a slice of crunchy bread, it is one of the worlds best foods.
Here is one of my favorite recipes.
Ingredients:
4-6 large skin on bone in chicken thighs or skinless boneless thighs
1 pint mushrooms - any kind you like
4 gloves of garlic mashed or minced
4 TBL butter
1 TBL olive oil
slash dry white wine
1 cup heavy cream
1 teaspoon each paprika, dried thyme, dried rosemary, garlic powder & onion powder.
1/2 cup grated Parmesan
salt & black pepper
chopped parsley
Directions:
Pat dry your chicken thighs and allow to come up to room temperature. Mix all you dried herbs and seasonings together and brush onto your chicken or sprinkle. Be sure to do both sides. Keep a reserve of the spice mix for later.
In a large pan on medium high heat add the olive oil. When hot add your chicken thighs skin side down. Sauté for 10-12 minutes then turn over And cook for another 10-12 minutes.
*15 minutes per side if your thighs are really thick.
Remove chicken from the pan and set aside.
Add next your butter and allow to melt. When melted add your mushrooms and sauté until nice and brown. Add next your mashed garlic and stir for 2 minutes. Add next your white wine and after 1 minute add your chopped parsley, salt black pepper and your reserved spices.
Stir well to incorporate then add your heavy cream - be sure to turn the heat down and bring the sauce to a very slight simmer.
Add the Parmesan cheese and stir.
Next add your chicken back into the pan and lightly coat each piece with the sauce.
Cover the pan and allow the chicken to simmer gently for 10 minutes.
Quick Tip - I love to serve this chicken over mashed sweet potatoes.
