Buttered Noodles

I will admit - I love buttered noodles. Simple and yummy.


My favorite is buttered egg noodles; however fettuccine works as does Pappardelle.


What I especially love to do is cook the noodles, drain and in a very hot pan with 4 TBL salted butter and 1 TLB olive oil throw them all in.


I give it all one good stir and on a medium high temp - allow the noodles to get screaming hot so that the noodles scorch... but not burn. Please stay by the stove. If you do it right the noodles will get a nice crunchy texture.. So great.


Add next a pinch of salt and black pepper - then flip over the noodles getting the other side done as well.


This dish makes a wonderful quick lunch or dinner.


Top the noodles with a touch of grated Parmesan.


I enjoy my buttered noodles with an iced cold glass of white wine.
