Butter & Parsley Potato’s - 2 ways

There is no side dish that can make a meal a total success better than potatoes; it’s the most versatile root vegetable there is. There are literally dozens of ways to prepare.


For weeknight meals keeping the potato side simple is the best way to go.


Here are 2 ways to do one of my favorite versions of butter parsley potatoes.


The first recipe is with the skins off and the second way is with the skins left on.


1) Butter Parsley Potatoes - skin off

6 medium size Yukon Gold potatoes - peeled and cut into chunks

2-3 TBL Butter

2 TBL finely chopped parsley

salt and black pepper


In a pot of salted cold water place your peeled potato chunks. Cook on high heat until boiling. Test for doneness in 15 minutes. You want very tender potatoes. If in doubt boil a few minutes longer.

Drain well


Place the drained potatoes back into the hot pot and add the butter in two stages. Stir well in between each stage being careful not to mash the potatoes. Top with a little bit more salt and black pepper. Top with the chopped parsley.

Serve immediately


2) Butter Parsley Potatoes - skin on

12-15 small sized yellow potatoes - usually sold in a mesh bag

2 shallots chopped very fine - use a mini chop if you have one

2-3 TBL butter

1 TBL olive oil

2 TBL fresh chopped parsley


In a pot of salted boiling water add your small potatoes. Par boil for 5-7 minutes then drain the potatoes well. Allow potatoes to cool for 10 minutes, then slice each potato in half.

Place a large non stick skillet on medium heat. Add the olive oil and 2 TBL butter and allow to melt. Add the finely chopped shallots and sauté for 2-3 minutes. Add next all your potatoes. Spread evenly if you can. Top with a pinch of salt and pepper and sauté for approx 5-8 minutes, turning the potatoes carefully and cooking for 5-8 minutes until all sides are lightly browned and the potatoes are tender. This could take a total of 20 minutes.

When the potatoes are done add 1 TBL of butter and allow to melt. Finish with the chopped parsley


Serve immediately ENJOY!
