Berry Mascarpone Coffee Cake

I must admit I do not like to bake very often but when I do it has to be very simple recipes. My cookbook on desserts should have included this recipe; however I only just discovered it.


I used a simple cast iron skillet for this cake but when I do a double-batch - I will use my springform pan.


Ingredients:

*Room Temp 30 minutes on eggs and mascarpone

8 oz. mascarpone cheese

2 large eggs

1 cup sifted flour

2/3 cups sugar

1 teaspoon baking powder

1/2 teaspoon salt

4 oz unsalted butter

1 teaspoon orange extract

1/2 teaspoon vanilla extract

1/2 cup sliced in quarters - strawberries

1/2 cup fresh blueberries


Directions:


preheat oven to 330 degrees


Grease with butter an 8” cake pan, a cast iron pan or a springform


In a large bowl sift your flour then add in the sugar, salt and baking powder.


In another bowl melt the butter and allow it to cool for a minute or two. Add in two beaten eggs, the mascarpone and your orange and vanilla extract.


Whisk well to incorporate.


Add the wet mixture into the dry and whisk until just done. No need to over mix or use a hand mixer at all..which I love.


Fold in your berries. You can use raspberries or blackberries if you wish.


Bake for 40-45 minutes. Then cool for 15 minutes.
