Avocado & Toast - 3 ways

So many requests for different ideas on Avocado & Toast.


For years all I did was a simple smashed avocado on toast with fresh lemon juice, coarse sea salt and fresh cracked black pepper.


Today, I am far more adventurous. I will sometimes heat the avocado in a non-stick with a little butter or olive oil then smash onto toast and top with a poached egg, or an over easy egg. A fantastic quick way to enjoy avocado at breakfast.


Here are some other ideas. I hope to inspire you that when it comes to Avocado & Toast the sky is the limit!


1) Avocado & Toast with sliced hard boiled egg, topped with a pinch of Emeril’s, paprika or hot sauce.


2) Avocado & Toast smashed on rye or oatmeal bread with sliced small yellow & orange cherry tomatoes, a tiny bit of red onion, a slice of prosciutto and a drizzle of olive oil. **You can also add shaved Parmesan if you like.


3) Avocado & Toast with arugula or mixed greens, lemon juice, sliced heirloom tomato finished with a homemade lemon aioli.


Quick Tip - Lemon Aioli - mix 1/4 cup mayo with lemon zest, juice of one lemon, garlic powder or chopped shallots, salt & black pepper. Stir until nice & smooth. taste and adjust with more lemon, etc.
