Braised Beef Brisket w/Onion Gravy

Here is another wonderful recipe for both a Dutch Oven or a Crock Pot. Perfect for a Fall or Winter dinner. Serve with rich creamy mashed potatoes, roasted vegetables or a potato vegetable tian and you will have a new menu favorite.
Ingredients:
4-5 lb. flat cut brisket
3 lbs of yellow onions sliced 1/2" thick
2 Tbsp brown sugar (light or dark)
4-5 large garlic cloves - minced
1 tsp Paprika (smoked or sweet)
1 Tbsp Olive Oil
1 Tbsp Tomato Pasta
1/2 cup Red Vermouth or Red Wine
1 (14.5 oz) can Fire Roasted Tomatoes
1 tsp dried Italian herbs
2 sprigs of fresh thyme
1 sprig of fresh rosemary - leaves removed and chop fine
1 1/2 Tbsp of flour
1/2 cup low sodium beef broth - chicken broth will work if that is on hand
Salt and Pepper
Preheat Oven to 325 degrees.
In a large Dutch Oven heat Olive Oil on medium high heat. Pat dry your beef and season all sides with salt and pepper then lightly coat with 1 Tbsp of flour shaking off all excess. Drop the beef into the hot oil and sear for 5 minutes on the first side. Turn and sear on the other side for 4 minutes more.
Remove Brisket from the Dutch Oven and add more olive oil into the dutch oven add all of your sliced onions, saute for approx 10 minutes adding pinches of salt and pepper.
After 10 minutes add the garlic, brown sugar, Italian herbs, paprika, and cook for 2 minutes more - scrapping up any of brown bits from the bottom of your dutch oven. Add next 1/2 Tbsp of flour and cook for one minute more. Add red vermouth or red wine, tomatoes, tomato paste stir and cook until the liquid begins to thicken.
Add the beef brisket back into the Dutch Oven and spoon the onion mixture all over the top of the beef. Cover the dutch oven and place into the oven for 2 1/2 - 3 hours.
Plate your Beef Brisket and slice (spooning) the onion gravy all over the top before serving.
Crock Pot Style - Sear the beef on the side as noted above and then do the onions exactly the same. Pour the onions and all of the liquids and spices into the Crock Pot. Stir in 1 Tsp of flour and mix together. Add the seared beef brisket and set your timer for 4-5 hours.
